Here is a simple recipe for a South Tyrolean goulash soup

Ingredients:

  • 500 g beef, diced
  • 3 large onions, diced
  • 2-3 cloves of garlic, finely chopped
  • 3 tbsp vegetable oil
  • 2 tbsp tomato paste
  • 2-3 tbsp paprika (sweet)
  • 1 tsp marjoram
  • 1/2 tsp caraway
  • 1 bay leaf
  • 1 liter beef broth
  • 3-4 medium-sized potatoes, diced
  • Salt and pepper to taste
  • Optional: 1-2 tsp hot paprika powder for some spiciness
  • Fresh parsley for garnishing

Instructions:

  1. Brown the meat: Heat the oil in a large pot. Add the beef and brown it all around. Take the meat out of the pot and set it aside.

  2. Sauté onions and garlic: In the same pot, sauté the onions and garlic until they are soft and slightly golden brown.

  3. Add spices: Add the tomato paste, paprika, marjoram, caraway, and the bay leaf. Stir well and let it sauté briefly.

  4. Add meat and broth: Put the browned meat back into the pot. Pour the beef broth over it and bring the soup to a boil.

  5. Let it cook: Reduce the heat and let the soup simmer for about 1 hour until the meat is almost tender.

  6. Add potatoes: Add the diced potatoes and let the soup simmer for another 20-30 minutes until the potatoes are soft.

  7. Season: Taste the soup with salt, pepper, and if desired, some hot paprika powder.

  8. Serve: Remove the bay leaf, garnish the soup with fresh parsley and serve hot.

This goulash soup is a classic, hearty dish from South Tyrol that is particularly popular in the colder months. It goes excellently with fresh bread or a crispy roll.
