Here is a simple recipe for a South Tyrolean goulash soup
Ingredients:
- 500 g beef, diced
- 3 large onions, diced
- 2-3 cloves of garlic, finely chopped
- 3 tbsp vegetable oil
- 2 tbsp tomato paste
- 2-3 tbsp paprika (sweet)
- 1 tsp marjoram
- 1/2 tsp caraway
- 1 bay leaf
- 1 liter beef broth
- 3-4 medium-sized potatoes, diced
- Salt and pepper to taste
- Optional: 1-2 tsp hot paprika powder for some spiciness
- Fresh parsley for garnishing
Instructions:

Brown the meat: Heat the oil in a large pot. Add the beef and brown it all around. Take the meat out of the pot and set it aside.

Sauté onions and garlic: In the same pot, sauté the onions and garlic until they are soft and slightly golden brown.

Add spices: Add the tomato paste, paprika, marjoram, caraway, and the bay leaf. Stir well and let it sauté briefly.

Add meat and broth: Put the browned meat back into the pot. Pour the beef broth over it and bring the soup to a boil.

Let it cook: Reduce the heat and let the soup simmer for about 1 hour until the meat is almost tender.

Add potatoes: Add the diced potatoes and let the soup simmer for another 20-30 minutes until the potatoes are soft.
