For more than 100 years, red wine varieties such as Lagrein, Vernatsch, Merlot, or Pinot Noir have been cultivated in South Tyrol, but in over 45 percent of the vineyards, white grape varieties are also found, from which Pinot Blanc, Chardonnay, or Pinot Gris are made. In addition, varieties such as Riesling, Gewürztraminer, Grüner Veltliner, or Sauvignon produce characterful fruity wines, which also form the basis for South Tyrolean sparkling wine. Special emphasis is also placed on biodynamic wines, meaning that chemical-synthetic fertilizers or pesticides are avoided in production, the vineyard ecosystem is taken into account, and plant and animal diversity is promoted.

Many hotels in South Tyrol therefore place great importance on an exquisite wine list and strive to introduce guests to the noble grape juice. For some establishments, wine has even become a focal point; they have their own wine cellars where elegant white and red wines or finely sparkling champagne varieties are stored. A vacation centered around the noble drop is therefore a unique experience. One has the opportunity to participate in educational wine tastings and explore historical stone cellars where real treasures and rarities for wine lovers can be found. Along the way, one also learns all sorts of interesting facts about viticulture and grape varieties, and, for example, gets to know the characteristics of indigenous wines. Tasting evenings take guests into the world of flavors of the South Tyrolean wine landscape, where one can sample excellent South Tyrolean top wines in rustic and atmospheric cellars. Experienced sommeliers are happy to share their knowledge with visitors and also tell exciting stories about viticulture. To accompany this, real South Tyrolean specialties such as bacon, Kaminwurzen, cheese, or Schüttelbrot are served, but wine tastings are also very popular as part of 4- or 5-course menus, so nothing stands in the way of a special taste experience.
