Barley soup

South Tyrolean barley soup as grandmother used to make. Put the barley, the smoked meat, and the bacon rinds into water and let simmer slowly for 2 - 2.5 hours.

Ingredients:

  • 60 g pearl barley
  • 1/2 l water
  • a piece of smoked meat and
  • rinds from smoked bacon
  • 1 tbsp onions, finely chopped
  • 2 carrots
  • 1 tbsp flour
  • salt
  • 2 tbsp cream

Put the barley, the smoked meat, and the bacon rinds into the water and let it simmer slowly for 2 - 2.5 hours. Add the finely chopped vegetables and the diced potatoes 1/2 hour before the end of the cooking time and let them cook until soft. 1/4 hour before serving, stir the flour with some cold water in a cup and add it to the hot soup. Let it boil briefly. Finally, season with salt and cream.
