Asparagus – also called "Asparagus" – is a perennial plant whose rootstock overwinters and then sprouts again in the spring. In the South Tyrolean asparagus stronghold of Terlan, predominantly white asparagus is cultivated, which is marketed under the protected designation "Margarete". The name can be traced back to Margarete of Tyrol-Görz, who liked to stay at the Neuhaus Castle in Terlan. Since there are about 300 days of sunshine per year in the region, the conditions for asparagus cultivation here are also optimal. In total, the popular vegetable is cultivated by 15 Terlan asparagus farmers on an area of about 10 hectares and then brought fresh from the field to the connoisseur.
Pleasure products from South Tyrol: Terlan Asparagus
Asparagus is extremely healthy, as it has only about 20 calories per 100 g and also contains numerous vitamins such as vitamin C, A, B6, B2, and B1. The minerals calcium, phosphorus, and potassium promote bone development and strengthen the nerves.
Since 1984, the so-called Terlan Asparagus Weeks have been held annually in April and May, offering a variety of events that focus on asparagus. For example, there are culinary asparagus hikes on the program, where you can learn a lot of interesting facts about the cultivation from the farmers and watch chefs prepare various asparagus dishes. If you like, you can also take a carriage ride or cycle three stages and try various asparagus dishes along the way. The so-called "asparagus hosts" also offer a variety of asparagus variations during this time. In addition, the Terlan winery produces its own asparagus wine: a Sauvignon Blanc, which is bottled especially for the asparagus season.
